Kingdom Come: Deliverance 2 Horse

You can reclaim your original horse, Pebbles, from the horse trader in Semine. However, this isn't a simple task. You'll need to either pay him Groschen, persuade him, or intimidate him into relinquishing Pebbles. My experience involved progressing the main questline, working with Radovan the blacksmith, and obtaining new clothes to enhance my noble appearance. How to Steal a Horse

I recommend targeting the farmhouse near Vidlak Pond. The fishermen there own two horses, easily stolen and ridden away.

Afterward, visit the Nomads' Camp east of Vidlak Pond. The horse trainer there can teach you how to saddle and tame your newly acquired steed, though you'll need to pay for his services. Alternatively, you can ride the horse untamed.
